Yukon gold potatoes
  • 3 lb Yukon gold potatoes, peeled and cubed
carrots
  • 2 carrots, diced
celery
  • 2 celery, diced
onion
  • 1 onion, diced
garlic
  • 4 garlic, minced
beef broth
  • 5 cup beef broth
fire-roasted tomatoes
  • 1 can (14 oz) fire-roasted tomatoes
olive oil
  • 2 tbsp olive oil
smoked paprika
  • 2 tbsp smoked paprika
cumin
  • 1 tsp cumin
Worcestershire sauce
  • 1 tsp Worcestershire sauce
chipotle powder
  • 0.5 tsp chipotle powder
salt and pepper
  • 1 Salt and pepper to taste
fresh parsley
  • 1 fresh parsley for garnish

Equipment

  • 1 Dutch oven

Method

Sear the beef
  1. Season the beef with salt, pepper, and 1 tablespoon smoked paprika. Heat 2 tablespoons olive oil in a Dutch oven over high heat and sear the beef until deeply browned on all sides, about 5 minutes total, then remove.
Build the smoky base
  1. Sauté the onion, carrots, and celery in the same pot until softened, about 5 minutes. Add the garlic and cook 1 minute, stirring, until fragrant with a glossy look.
  2. Stir in the remaining smoked paprika, cumin, and chipotle powder and cook 1 minute. Cook until the spices darken slightly and smell toasted.
Simmer into soup
  1. Add the beef broth, fire-roasted tomatoes, Worcestershire sauce, and browned beef, then bring everything to a boil over high heat. You should see steady bubbling across the surface.
  2. Reduce the heat and simmer for 25-30 minutes. Keep it at a gentle simmer, with small bubbles consistently breaking the surface.
  3. Add the potatoes and simmer for 20 more minutes, until the beef and potatoes are tender. Look for potatoes that yield easily when pressed.
Finish and serve
  1. Season with salt and pepper to taste. Give the soup a final stir until the seasoning is fully integrated.
  2. Garnish with fresh parsley before serving. Add it right at the end so it stays bright green.

Notes

Pro tip: when you sear the beef, don’t crowd the pot—leave space so browning happens quickly for deeper flavor. Store in an airtight container in the refrigerator up to 4 days; reheat gently on the stovetop or microwave. Freezing is yes—freeze portions up to 3 months, then thaw and reheat; you may want to loosen with a splash of broth. For a dietary swap, use a low-sodium beef broth and adjust salt at the end.
