  • 1 cilantro For serving, chopped.
  • 1 lime For serving, cut into wedges.
  • 1 salt To taste.

Equipment

Method

Cook the flavor base
  1. Sauté the onion in a large pot for 4 minutes. Stir until softened and lightly translucent.
  2. Add the garlic, cumin, chili powder, oregano, and smoked paprika and cook for 2 minutes. Stir constantly so the spices become fragrant.
Simmer the chili
  1. Add the chicken broth, white beans, corn, and diced green chiles; bring to a boil. Watch for active bubbling across the surface.
  2. Reduce heat and stir in the cream cheese until melted. Keep stirring until the broth turns smooth and creamy.
  3. Add the shredded chicken and heavy cream and simmer for 10 minutes. Simmer gently until the chicken is heated through.
Season and serve
  1. Season with salt and pepper to taste. Serve immediately with sour cream, pepper jack, jalapeño, cilantro, and lime on top.

Notes

Pro tip: For the creamiest texture, keep the heat at a low simmer after adding the cream cheese so it melts smoothly without breaking. Store leftovers in the refrigerator up to 4 days; reheat gently on the stovetop. Freeze yes—freeze up to 2 months, then rewarm on low and add a splash of heavy cream or broth if needed. Dietary swap: use reduced-fat cream cheese and heavy cream or substitute half-and-half for a lighter version.
