Make the bacon jam
- Cook the bacon in a 10-inch skillet over medium heat for 8–10 minutes, stirring occasionally, until crisp.
- Transfer the bacon to a paper towel-lined plate.
- Pour off all but 1 tablespoon of bacon fat.
- Add the onion to the skillet and cook over medium heat for 4–5 minutes, until softened.
- Add the garlic and cook for 30 seconds.
- Carefully pour in the whiskey and simmer for 2 minutes.
- Stir in the brown sugar, coffee, vinegar, and black pepper, scraping up the browned bits.
- Return the bacon to the skillet and simmer over medium-low heat for 15–20 minutes, stirring often, until the liquid is syrupy and the mixture is cohesive.
- Cool the bacon jam until no longer warm.
Cook the eggs
- Place the eggs in a 2-quart saucepan.
- Add the 4 cups water, enough to cover the eggs by about 1 inch.
- Bring to a boil over high heat, cover, remove from the heat, and let stand for 12 minutes.
- Drain the eggs and rinse them under cold running water until cool enough to handle.
- Peel the eggs.
Fill the eggs
- Halve the eggs lengthwise and remove the yolks.
- Arrange the whites cut-side up on a serving platter.
- Mash the yolks with the mayonnaise, Dijon mustard, salt, and 2 tablespoons of the cooled bacon jam.
- Spoon the filling into the egg whites.
- Spoon the remaining bacon jam over the eggs.
- Refrigerate for 20 minutes before serving.
Notes
For the best texture, cool the bacon jam until no longer warm before mixing it into the yolks. Refrigerate leftovers for up to 2 days; freezing is not recommended. For an alcohol-free variation, replace the whiskey with apple juice.
