Ingredients

Beef and potatoes
  • 2 lb beef sirloin or chuck Cut into 1.5-inch cubes
  • 1.5 lb baby potatoes Halved
  • 6 garlic Minced
  • 0.5 cup unsalted butter Cubed
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 1 fresh parsley For serving
  • 1 parmesan For serving
  • 1 salt and pepper To taste

Equipment

  • 1 Dutch oven

Method

Season and layer
  1. Season the beef cubes with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Place the baby potatoes in the bottom of the Crockpot and nestle the beef on top.
  3. Scatter the minced garlic and cubed butter over everything.
  4. Pour the beef broth and Worcestershire around the sides, then sprinkle the Italian seasoning over the top.
Slow cook
  1. Cook on Low for 6-8 hours, until the beef is tender and easily pierced with a fork.
  2. Alternatively, cook on High for 3-4 hours, until the beef is tender and the potatoes are fully cooked.
Finish and serve
  1. Stir gently to coat everything in the garlic butter sauce, turning beef and potatoes so they glisten evenly.
  2. Serve hot with fresh parsley and parmesan.

Notes

For best coating, stir only once or twice near the end so the potatoes don’t break apart. Store leftovers in the refrigerator for up to 4 days; freeze for up to 3 months (reheat gently so the sauce stays glossy). For a lighter option, use half the butter or swap in a plant-based butter that measures cup-for-cup.
