  • 0.3333333333 cup key lime juice
  • 3 tbsp honey
  • 1 tsp key lime zest
Bark topping
  • 0.5 cup graham cracker crumbs
  • 0.25 cup white chocolate chips melted

Method
 

Prep and mix
  1. Line a sheet pan with parchment paper.
  2. Whisk together the plain Greek yogurt, key lime juice, honey, and key lime zest until smooth.
Assemble the bark
  1. Spread the yogurt mixture evenly on the prepared sheet pan to about 1/4-inch thick.
  2. Sprinkle the graham cracker crumbs evenly over the top, pressing gently so they stick.
  3. Drizzle the melted white chocolate over the top in a zigzag pattern.
Freeze and serve
  1. Freeze for at least 2 hours, until solid and scoopable.
  2. Break into pieces and store in the freezer in an airtight container.

Notes

For the cleanest snap, keep the bark frozen until serving and break it straight from the freezer. Store covered in the freezer up to 2 months; no oven or stovetop is needed for this recipe, so there’s no freezer-to-fridge melting step. For a dairy-light option, use plain Greek yogurt labeled low-fat or nonfat (texture will be slightly softer).
