Green Bean Bundles

Green bean bundles wrap crisp-tender beans in bacon and bake under a buttery brown sugar and garlic glaze. Blanching the beans first helps them keep their bright color and tender-crisp texture.

Ingredients

For the bundles
  • 2 lb green beans fresh, trimmed
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 8 bacon slices
  • nonstick cooking spray
For the glaze
  • 0.5 cup unsalted butter
  • 0.5 cup brown sugar light, packed
  • 0.5 tsp garlic powder

Equipment

  • 1 9x13-inch baking dish

Method

Blanch and bundle
  1. Heat the oven to 400°F.
  2. Bring a large pot of water to a boil.
  3. Prepare a bowl of ice water.
  4. Add the green beans to the boiling water and cook for 3 to 4 minutes, until bright green and crisp-tender.
  5. Transfer the green beans to the ice water to cool.
  6. Drain the green beans and pat thoroughly dry.
  7. Cook the bacon in a skillet over medium heat for 4 to 5 minutes, turning once, until some fat has rendered but the slices are still pliable.
  8. Drain the bacon on paper towels.
  9. Season the green beans with the salt and pepper.
  10. Divide the green beans into 8 bundles.
  11. Wrap each bundle with a slice of bacon.
Make the glaze and bake
  1. Melt the butter in a small saucepan over medium-low heat.
  2. Stir in the brown sugar and garlic powder and cook for 1 to 2 minutes, stirring, until combined.
  3. Coat a 9x13-inch baking dish with nonstick cooking spray.
  4. Arrange the bundles in the baking dish.
  5. Pour the glaze evenly over the bundles.
  6. Bake for 20 to 25 minutes, until the bacon is browned.
  7. Let the bundles rest for 5 minutes before serving.

Notes

Pat the green beans thoroughly dry so the glaze coats them well. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the beans can lose their texture. For a pork-free option, use turkey bacon.
