Ingredients

For the filling
  • 3.5 lb apples about 8 medium, peeled, cored, and sliced 1/4 inch thick
  • 0.33 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon divided
For the topping
  • 1.5 cups rolled oats certified gluten-free
  • 1 cup almond flour blanched
  • 0.75 cup light brown sugar packed
  • 0.5 tsp kosher salt
  • 0.5 cup vegan butter cold and cut into small cubes

Equipment

  • 1 9x13-inch baking dish

Method

Prepare the filling
  1. Heat the oven to 375°F.
  2. Lightly grease a 9x13-inch baking dish.
  3. In a large bowl, toss the apples with the granulated sugar, cornstarch, lemon juice, and 1/2 teaspoon of the cinnamon.
  4. Spread the apple mixture in the prepared dish.
Make the topping and bake
  1. In a medium bowl, stir together the oats, almond flour, brown sugar, salt, and remaining 1/2 teaspoon cinnamon.
  2. Work in the cold vegan butter with your fingers until coarse clumps form.
  3. Scatter the topping evenly over the apples.
  4. Bake for 45 to 55 minutes, until the topping is golden and the filling is bubbling around the edges and the apples are tender when pierced with a knife.
  5. Let the crisp rest for 15 minutes before serving.

Notes

For an even bake, slice the apples uniformly. Refrigerate leftovers for up to 4 days; freezer: yes, freeze in an airtight container. For a nut-free variation, use certified gluten-free oat flour in place of the almond flour; the topping texture may differ.
