Sauté the aromatics
- Heat the olive oil in a large pot over medium heat, then sauté the onion for 5 minutes until softened and glossy. Keep it moving so the onion doesn’t brown.
- Add the garlic and grated ginger, cooking for 2 minutes until fragrant. The garlic should smell sweet, not sharp.
- Stir in the cinnamon, nutmeg, and cayenne and cook for 1 minute. The spices should darken slightly and smell toasted.
Simmer until tender
- Add the broth and cubed sweet potatoes, then bring the mixture to a simmer. Start counting at a gentle bubble and keep the surface moving.
- Simmer for 25-30 minutes, until the sweet potatoes are very tender. You should be able to pierce them easily with a spoon.
Blend and finish
- Blend completely smooth with an immersion blender until no lumps remain. The soup should turn into a uniform velvet orange.
- Stir in the coconut milk, maple syrup, and orange juice, then return to a gentle simmer. Watch for steam and small bubbles around the edges.
- Season generously with salt and pepper to taste. Adjust until the flavor pops against the sweetness.
- Serve hot with toasted pepitas and a swirl of cream on top. Finish with the pepitas visible and the cream forming a light swirl.
Notes
For the creamiest texture, blend while the soup is hot and pulse until fully smooth before adding coconut milk. Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat gently on the stove to avoid thinning. Freezing works well for up to 2 months—thaw overnight and reheat, then stir well. For a dairy-free option at serving, use coconut cream swirls instead of regular cream.
