Ingredients

  • 1 nonstick cooking spray
  • 1 package (17.3 oz) frozen puff pastry 2 sheets, thawed
  • 8 oz Brie cheese cut into 24 small cubes
  • 0.5 cup whole-berry cranberry sauce
  • 0.25 cup pecans finely chopped
  • 1 tbsp fresh rosemary finely chopped

Equipment

  • 2 12-cup mini muffin tin

Method

  1. Preheat the oven to 375°F.
  2. Coat two 12-cup mini muffin tins with nonstick cooking spray.
  3. Cut each puff pastry sheet into 12 equal squares.
  4. Press one square into each muffin cup.
  5. Place a Brie cube in each pastry cup.
  6. Top each with about 1 teaspoon cranberry sauce.
  7. Sprinkle the pecans and rosemary evenly over the bites.
  8. Bake for 15–18 minutes, until the pastry is puffed and golden and the Brie is melted.
  9. Let the bites rest in the tins for 5 minutes.
  10. Gently loosen the bites and serve warm.

Notes

For the cleanest release, gently loosen the bites after they have rested for 5 minutes. Refrigerate leftovers for up to 3 days; freezing is not recommended because the pastry may lose its crisp texture. For a nut-free option, omit the pecans.
