Ingredients

For the cheese ball
  • 2 block (8 oz) cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 1 packet (1 oz) ranch seasoning mix
  • 2 tbsp green onions thinly sliced
For the coating
  • 0.75 cup pecans finely chopped

Method

Mix and chill the cheese ball
  1. In a medium bowl, mix the cream cheese, cheddar, ranch seasoning, and green onions until evenly combined.
  2. Shape the mixture into a ball.
  3. Wrap tightly in plastic wrap.
  4. Refrigerate for at least 2 hours, until firm.
Coat and serve
  1. Spread the pecans on a plate.
  2. Roll the chilled cheese ball in the pecans, gently pressing so they adhere.
  3. Refrigerate until ready to serve.

Notes

For the smoothest texture, let the softened cream cheese sit at room temperature before mixing. Store covered in the refrigerator for up to 3 days; freeze without the pecan coating for up to 1 month and thaw in the refrigerator before coating. For a nut-free option, replace the pecans with toasted pumpkin seeds.
