Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion medium, diced
  • 1 red bell pepper medium, diced
  • 1 Granny Smith apple medium, peeled, cored, and diced
  • 1 lb ground turkey 93% lean
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 3 cloves garlic minced
  • 1 tbsp fresh sage finely chopped
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 1 tbsp tomato paste
  • 1 can (28 oz) diced tomatoes with juices
  • 1 can (15 oz) cannellini beans drained and rinsed
  • 1 cup low-sodium chicken broth

Equipment

  • 1 5- to 6-quart Dutch oven

Method

  1. Heat the olive oil in a 5- to 6-quart Dutch oven over medium heat, then add the onion, bell pepper, and apple and cook for 5 to 7 minutes, stirring occasionally, until the onion begins to soften.
  2. Add the ground turkey, salt, and pepper; cook over medium-high heat for 6 to 8 minutes, breaking up the meat, until no pink remains.
  3. Stir in the garlic, sage, chili powder, cumin, smoked paprika, and tomato paste and cook for 1 minute over medium heat.
  4. Add the diced tomatoes, cannellini beans, and chicken broth; bring to a boil, then reduce the heat and simmer uncovered for 25 to 35 minutes, stirring occasionally, until thickened, the apple is tender, and the turkey reaches 165°F.
  5. Remove the pot from the heat and let the chili rest for 5 minutes before serving.

Notes

For a hearty texture, break the turkey into small pieces as it cooks. Refrigerate leftovers for 3 to 4 days or freeze for up to 3 months. For a gluten-free meal, check that the chicken broth is certified gluten-free.
