Ingredients

  • 2 lb carrots peeled and cut into 1-inch pieces
  • 0.25 cup maple syrup pure
  • 0.25 cup light brown sugar packed
  • 3 tbsp unsalted butter cut into pieces
  • 0.5 tsp kosher salt
  • 1 tbsp cornstarch
  • 1 tbsp water cold

Equipment

  • 1 4-quart slow cooker

Method

  1. Add the carrots, maple syrup, brown sugar, butter, and salt to a 4-quart slow cooker and toss to coat.
  2. Cover and cook on LOW for 3 to 4 hours or HIGH for 2 to 3 hours, stirring halfway through, until the carrots are fork-tender.
  3. In a small bowl, stir the cornstarch and cold water until smooth, then stir the mixture into the carrots and cooking liquid.
  4. Cook uncovered on HIGH for 15 to 20 minutes, stirring once, until the glaze thickens and coats the carrots.

Notes

For an evenly thickened glaze, stir the cornstarch and cold water until completely smooth before adding it. Refrigerate leftovers for up to 4 days; freezing is not recommended because the carrots can soften after thawing. For a dairy-free version, use a plant-based butter substitute.
