Roasted Mushrooms with Garlic and Thyme

Roasted mushrooms with garlic and thyme turn cremini mushrooms into a browned, tender side dish with fragrant herbs. They roast on a rimmed baking sheet, with the garlic added partway through so it stays aromatic.

Ingredients

  • 1.5 lb cremini mushrooms wiped clean, stems trimmed, and sliced 1/2 inch thick
  • 2 tbsp olive oil
  • 0.75 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 tbsp thyme leaves fresh
  • 3 cloves garlic minced

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Heat the oven to 425°F and set a rack in the center.
  2. Toss the mushrooms with the olive oil, salt, pepper, and thyme, then spread in a single layer on an 18x13-inch rimmed baking sheet.
  3. Roast for 15 minutes, then stir in the garlic and spread the mushrooms back into a single layer.
  4. Roast for 8 to 12 minutes more, until the mushrooms are browned and tender.

Notes

For even browning, spread the mushrooms in a single layer without crowding the baking sheet. Refrigerate leftovers for up to 4 days; freezing is not recommended because the mushrooms can become soft. The recipe is naturally vegan and gluten-free, so no dietary swap is needed.
