Ingredients

  • 5 lb potatoes Yukon Gold, peeled and cut into 1-inch pieces
  • 4 qt water cold
  • 1 cup milk whole
  • 0.5 cup butter unsalted, softened and divided
  • 1 block (8 oz) cream cheese softened and cut into pieces
  • 1 cup sour cream
  • 2 tsp kosher salt
  • 0.5 tsp black pepper ground
  • nonstick cooking spray

Equipment

  • 1 9x13-inch baking dish

Method

  1. Put the potatoes in a 10-quart pot and add the cold water. Bring to a boil over high heat, then reduce the heat and simmer for 15–20 minutes, until the potatoes are very tender when pierced with a fork.
  2. While the potatoes cook, warm the milk in a small saucepan over medium-low heat until steaming but not boiling.
  3. Drain the potatoes well and return them to the pot. Mash by hand with 6 tablespoons of the butter, the cream cheese, sour cream, warm milk, salt, and pepper until creamy.
  4. Coat a 9x13-inch baking dish with nonstick cooking spray and transfer the potatoes to it. Smooth the top and dot with the remaining 2 tablespoons butter.
  5. Let the potatoes cool uncovered for 20–30 minutes.
  6. Cover tightly and refrigerate within 2 hours of cooking for up to 2 days.
  7. When ready to serve, heat the oven to 350°F.
  8. Bake the cold, covered potatoes for 50–60 minutes, uncovering for the last 10 minutes, until the center reaches 165°F.

Notes

For the creamiest texture, mash the potatoes while they are hot. Refrigerate tightly covered for up to 2 days; freezing is not recommended because the texture may change. For a dairy-free variation, use unsweetened plant milk and dairy-free butter, cream cheese, and sour cream.
