Ingredients

For the filling
  • 1 tsp nonstick cooking spray
  • 2.5 lb apples tart-sweet, peeled, cored, and cut into 1/2-inch slices
  • 0.33 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
For the topping
  • 1 cup flour all-purpose
  • 0.5 cup oats old-fashioned rolled
  • 0.5 cup brown sugar packed, light
  • 0.25 tsp salt kosher
  • 8 tbsp unsalted butter 1 stick, cold, cut into small cubes

Equipment

  • 1 9-inch square baking dish

Method

Prepare the filling
  1. Heat the oven to 375°F.
  2. Lightly coat a 9-inch square baking dish with the cooking spray.
  3. Toss the apples with the granulated sugar, cornstarch, lemon juice, and cinnamon in the baking dish.
  4. Spread the apples into an even layer.
Make the topping and bake
  1. Combine the flour, oats, brown sugar, and salt in a medium bowl.
  2. Work in the cold butter with your fingertips until the mixture forms pea-size clumps.
  3. Scatter the topping evenly over the apples.
  4. Bake for 45 to 55 minutes, until the topping is golden and the filling bubbles at the edges; a knife should slide easily into the apples.
  5. Let the crumble rest for 15 minutes before serving.

Notes

For the best crumbly topping, keep the butter cold while working it into the flour mixture. Refrigerate leftovers for up to 4 days; freeze for up to 3 months. For a dairy-free version, use a firm dairy-free butter in place of the unsalted butter.
