Method
Prepare the pastry
- Line a rimmed baking sheet with parchment paper.
- Unfold the puff pastry on a work surface and gently roll it into a roughly 10-inch square.
Assemble the pinwheels
- Spread the cream cheese evenly over the pastry, leaving a 1/2-inch border along one long edge.
- Gently spread the cranberry sauce over the cream cheese.
- Scatter the feta and rosemary evenly on top.
- Starting at the long edge opposite the border, roll the pastry tightly into a log and pinch the seam closed.
- Place it seam-side down on the prepared baking sheet and refrigerate for 20 minutes, until firm.
Bake
- While the log chills, preheat the oven to 400°F.
- Slice the log crosswise into 1/2-inch rounds and arrange them cut-side up on the baking sheet, about 1 inch apart.
- Beat the egg with the water.
- Lightly brush the exposed pastry edges with the egg wash.
- Bake for 15 to 20 minutes, until puffed and golden brown.
- Let the pinwheels rest on the baking sheet for 5 minutes before serving.
Notes
For clean rounds, chill the rolled log until firm before slicing. Store leftovers in an airtight container in the refrigerator for up to 3 days; freeze baked pinwheels for up to 2 months. For a dairy-free option, use dairy-free cream cheese and feta.
