Ingredients

  • 0.5 cup unsalted butter softened
  • 0.5 cup light brown sugar packed
  • 0.25 cup granulated sugar
  • 0.5 cup banana mashed, very ripe; about 1 medium banana
  • 1 egg yolk large
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour spooned and leveled
  • 0.5 tsp baking soda
  • 0.5 tsp ground cinnamon
  • 0.5 tsp kosher salt
  • 1 cup semisweet chocolate chips

Equipment

  • 1 18x13-inch baking sheet

Method

  1. Heat the oven to 350°F.
  2. Line an 18x13-inch baking sheet with parchment paper.
  3. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  4. In a large bowl, beat the butter, brown sugar, and granulated sugar until creamy, about 2 minutes.
  5. Beat in the mashed banana, egg yolk, and vanilla until combined.
  6. Add the flour mixture and mix just until no dry streaks remain.
  7. Fold in the chocolate chips.
  8. Cover and chill the dough for 45 minutes, until firm enough to scoop.
  9. Scoop the dough into 2-tablespoon portions, spacing 2 inches apart on the prepared baking sheet.
  10. Bake in batches for 11 to 13 minutes, until the edges are set and lightly golden.
  11. Cool the cookies on the baking sheet for 5 minutes.
  12. Transfer the cookies to a wire rack to cool completely.

Notes

Use very ripe banana for the strongest banana flavor, and chill the dough until firm enough to scoop so the cookies hold their shape. Store in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months. For a dairy-free option, use plant-based butter and dairy-free chocolate chips.
