Bacon Wrapped Stuffed Dates

Bacon wrapped stuffed dates are filled with softened goat cheese, wrapped in bacon, and baked until browned and crisp. A quick turn halfway through helps the bacon cook evenly, while the hot, creamy filling makes each bite rich and savory.

Ingredients

  • 24 dates Medjool, pitted
  • 4 oz goat cheese softened
  • 12 slices bacon regular-cut, cut crosswise in half

Equipment

  • 1 12x17-inch rimmed baking sheet

Method

  1. Heat oven to 400°F.
  2. Line a 12x17-inch rimmed baking sheet with foil and set a wire rack inside it.
  3. Fill each date with about 1 teaspoon goat cheese, pressing the sides closed around the filling.
  4. Wrap each date with a half slice of bacon.
  5. Secure each bacon-wrapped date with a toothpick.
  6. Arrange the dates seam side down on the rack.
  7. Bake for 20-25 minutes, turning them once halfway through, until the bacon is browned and crisp.
  8. Let the dates rest on the rack for 5 minutes before serving; the filling will be hot.

Notes

Press the date sides firmly around the goat cheese to help keep the filling in place. Store leftovers covered in the refrigerator for up to 3 days; freeze for up to 2 months. For a dairy-free variation, use a dairy-free soft cheese in place of the goat cheese.
