Method
- Heat the oven to 400°F.
- Line a large baking sheet with parchment paper.
- Toss the asparagus with the olive oil, salt, and pepper.
- Cut the puff pastry into eight strips, each about 1 1/4 inches wide and 10 inches long.
- Wrap one slice of prosciutto around the middle of each group of three asparagus spears.
- Wind one pastry strip in a loose spiral around the prosciutto and asparagus, tucking the ends underneath.
- Arrange the bundles on the baking sheet with space between them.
- Beat the egg with the water.
- Brush the pastry with the egg wash.
- Sprinkle the Parmesan over the bundles.
- Bake for 20–25 minutes, until the pastry is puffed and golden and the asparagus is tender.
- Rest on the baking sheet for 5 minutes before serving.
Notes
Keep the puff pastry cold while assembling for the flakiest results. Refrigerate leftovers for up to 3 days; freezing is not recommended because the pastry can lose its crisp texture. For a vegetarian variation, omit the prosciutto.
